Ingredients
  

Chicken
  • 4 pieces chicken breasts boneless and skinless
Sweet Potatoes
  • 2 large sweet potatoes peeled and cubed
Seasoning
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon dried thyme
Vegetables
  • 1 cup broccoli florets optional

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and thyme.
  3. Add the chicken breasts to the bowl and coat them evenly with the seasoning mixture.
  4. Place the cubed sweet potatoes in the baking dish and drizzle with a little olive oil, salt, and pepper.
Cooking
  1. Arrange the seasoned chicken breasts on top of the sweet potatoes in the baking dish.
  2. If using, scatter broccoli florets around the chicken and sweet potatoes.
  3. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender.
  4. Remove from the oven and let it rest for 5 minutes before serving.

Notes

Feel free to customize the vegetables based on your preference. This dish pairs well with a side salad.
