  • 4 large Portobello mushrooms
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 3 cloves garlic, minced
  • 2 tbsp fresh thyme or rosemary, finely chopped

Instructions

  1. Clean the Portobello mushrooms under cold water and pat dry.
  2. In a bowl, whisk together olive oil, balsamic vinegar, garlic, and herbs. Coat each mushroom cap generously with the marinade and let sit for at least 30 minutes.
  3. Preheat the grill to medium-high heat. Place the marinated mushrooms gill-side down on the grill and cook for 5-7 minutes until tender with nice grill marks.
  4. Flip the mushrooms using tongs and grill for an additional 3-5 minutes until juices are released.
  5. Let them rest briefly before serving. Enjoy them as is or topped with your favorite cheese!
